Fukamushicha, also known as deep steamed sencha, is Shizuoka’s signature style of green tea. This tea goes through a longer steaming process that typical sencha. As a result, this enhances the non-astringent sweetness of the brew. Named after the forest trees, Moriki Fukamushicha has a fragrant grassy aroma of young leaves and brews a mellow, smooth liquor that is rich with umami. These tea leaves were picked during the first harvest of the spring season. 

Fukamushicha is deep steamed green tea, in which the tea leaves are steamed for 120 seconds rather than 30-90 seconds. As a result, the tea leaves are broken into smaller pieces, producing a deep green when steeped.

Fukamushicha Steeping Instructions

  1. Heat fresh, filtered water until boiled.
  2. Pour water in cups to warm the cup and cool down the water. You can also use a yuzamashi water cooler.
  3. Pour water over tea leaves. Recommended water temperature for Fukamushicha is 176°F (80°C). The flavor will be lighter and sweeter when brewed at lower water temperatures such as 158°F (70°C). Try different brew times and temperatures to find your preference.
  4. Steep for 45 seconds. All of our teas can be steeped up to 3 times.

Cold Brew  (水出し)

Fukamushicha is especially refreshing when cold-steeped. Add 10g of tea leaves to 500 ml of cold water, and let it steep in the refrigerator for 3-4 hours.
