These sencha tea leaves are picked at the beginning of the summer after absorbing a good amount of sunlight during the spring months. Hime Sencha is a green tea blended with Matcha from the prestigious Uji, Kyoto. Uji has a long history of producing the finest quality matcha. Due to the matcha, this sencha is energizing and vegetal, brewing a vibrant green hue. The natural sweetness and umami of Hime Sencha makes it excellent and refreshing for cold brewing (水出し) as well. 

Sencha Steeping Instructions

  1. Heat fresh, filtered water until boiled.
  2. Pour water in cups to warm the cup and cool down the water. You can also use a yuzamashi water cooler.
  3. Pour water over tea leaves. Recommended water temperature for this Sencha is 176°F (80°C). The flavor will be lighter and sweeter when brewed at lower water temperatures such as 158°F (70°C). Try different brew times and temperatures to find your preference.
  4. Steep for 1-2 minutes. All of our teas can be steeped up to 3 times.

Cold Brew  (水出し)

We also recommend cold-brewing Hime Sencha. Add 10g of tea leaves to 500 ml of cold water, and let it steep in the refrigerator for 3-4 hours.

    Bright green color and tastes good. The matcha provides a deeper flavor. I just wish these came in the beautiful tin cans that their other teas have.

    I have been a tea lover for many years. Enjoying a hot cup in the evening is most relaxing to me. I was pleasantly surprised at how well the leaves looked. Then when I used a strainer, some of the tea leaves came out in the water and were a bright green and looked very fresh.
