The name Hatsuzumi (はつづみ) , meaning “first picking,” reflects the tea’s refreshing character. HOW TO BREW SENCHA
1 | Heat fresh, filtered water until boiled.
2 | Pour water into cups to warm the cup and cool down the water. You can also use a yuzamashi water cooler.
Recommended water temperature for Sencha is 176°F (80°C). The flavor will be lighter and sweeter when brewed at lower water temperatures such as 158°F (70°C). Try different brew times and temperatures to find your preference.
3 | When it reaches your desired temperature, pour water over the tea leaves. Steep for 1-1.5 minutes. This tea can be steeped up to 3 times.

HOW TO ENJOY SENCHA'S SECOND BREW
Did you know the second steeping of Sencha reveals a whole new flavor? After your first cup, keep the same leaves and brew again with slightly hotter water (around 185°F / 85°C) for 30–45 seconds.
This brings out a deeper umami flavor and a more aromatic, full-bodied cup. It’s a beautiful way to savor the evolving taste of high-quality Sencha — smooth, rich, and never bitter.

The quality of the organic Japanese green tea is so enlightening. In addition, it's a refreshing relaxing to drink promoting the feel of the energy. The color of the tea matters, especially when it's light in its color otherwise it will be bitterly strong if it gets darker than its normal color so timing is critical.
Received as a gift for Christmas, really love this tea!! The Sencha has become my new favorite daily tea!
