HOW TO BREW SENCHA
1 | Heat fresh, filtered water until boiled.
2 | Pour water into cups to warm the cup and cool down the water. You can also use a yuzamashi water cooler.
Recommended water temperature for Sencha is 176°F (80°C). The flavor will be lighter and sweeter when brewed at lower water temperatures such as 158°F (70°C). Try different brew times and temperatures to find your preference.
3 | When it reaches your desired temperature, pour water over the tea leaves. Steep for 1-1.5 minutes. This tea can be steeped up to 3 times.
I wanted an authentic, organic sencha from Japan. This has a mellow and smooth flavor.
Nice brilliant color and aroma. My wife and I love it.
I was disappointed by the quality of the loose leaf tea, lots of crumbled leaves, almost powder. So small that even my fine strainer would not catch it all.
Thankfully the flavor is good. I won’t buy it again, will look for larger filler leaves.
Smooth and uncomplicated taste combined with a fragrant aroma without any bitterness… will welcome a second cup…
Have bought several times and consistently good/tasty and I like the green color. After my tea kettle water reaches light boil, I remove from stove and open tea kettle lid and let steam escape from kettle and cool down for at least a minute then I steep 1 full level teaspoon for 8 ounces for 3 1/2 minutes (which is definitely longer than the 1.5 minute the company recommends) and is just strong enough for me but not bitter at all. If water is too hot or steeped longer than 4.5 minutes first cup, it could end up a little bitter. When later I make a 2nd cup I steep it longer 4-4.5 min and don't worry about letting water cool down and steeping can be longer for 3rd cup or 4th cup and not even worry how long... Even 5-10 minutes is fine but so is 4 1/2.
I also often put a couple little pieces of ginger root that I peel the bark/outside of and steep the peeled ginger with the tea that absorbs the ginger flavor. I dont swallow the ginger while sipping/drinking the tea - it stays on the bottom of the cup. After drinking all the tea I grab a piece of tea soaked ginger on the bottom of the cup and chew on it. If it's stringy or mushy then it's not so good to chew or swallow but I usually get some ginger from an Asian grocery that is crisp and crunchy 95% of the time. It's tasty to chew the tea soaked ginger - it doesn't have to be swallowed.
I use a fine mesh stainless steel tea strainer that fits over and inside my small 8 oz maximum coffee/ tea cup that has plenty of room for the loose tea to expand (practically as large as the cup itself).
