Genmai Matcha Suzu is made with sencha green tea and Japanese rice that has been soaked in water and then deeply roasted to create toasted rice. Often, some rice pops open during the roasting process, hence the white pieces in the tea that look similar to popcorn.

HOW TO BREW GENMAICHA

1 | Heat fresh, filtered water until boiled.

2 | Pour water into cups to warm the cup and cool down the water. You can also use a yuzamashi water cooler.

Recommended water temperature for this Sencha Genmaicha is 180°F (82°C). Try different brew times and temperatures to find your preference.

3 | Pour water over tea leaves.

4 | Steep for 1-1.5 minutes. This tea can be steeped up to 3 times.

HOW TO BREW ICED Genmaicha

1 | Add 10g of tea leaves to 500 ml of cold water

2 | Let it steep in the refrigerator for 3-4 hours

Note: Cold-brew green tea can keep in the fridge for 2-3 days.

For a bolder cup, hot brew the Genmaicha and then leave it in the fridge for 2 hours. Pour over ice and enjoy!
