Fukamushicha is Shizuoka’s signature style of sencha green tea that goes through a longer steaming process than a typical sencha. As a result, this enhances the natural sweetness of the brew with no astringency.

Fukamushicha is deep-steamed green tea, in which the tea leaves are steamed for 120 seconds rather than 30-90 seconds. The tea leaves become soft from the longer steam time, and during the rolling process, the tips often break into smaller pieces. This sencha brews deep green with plenty of nutrients due to the finer, smaller tea leaves.

HOW TO BREW SENCHA

1 | Heat fresh, filtered water until boiled.

2 | Pour water into cups to warm the cup and cool down the water. You can also use a yuzamashi water cooler.

Recommended water temperature for Sencha is 176°F (80°C). The flavor will be lighter and sweeter when brewed at lower water temperatures such as 158°F (70°C). Try different brew times and temperatures to find your preference.

3 | When it reaches your desired temperature, pour water over the tea leaves. Steep for 1-1.5 minutes. This tea can be steeped up to 3 times.
