How TO BREW Sencha?

Step 1


Boil fresh water and pour into a yuzamashi (water cooler) or cup(s) to adjust the water temperature. Simply pouring hot water into a small tea cup will reduce its temperature by 10°C / 20°F.

Step 2


Add 1 teaspoon of sencha into your teapot/kyusu to brew 1 cup/8oz of tea.

Brewing a teabag with kyusu:

Brew 1 teabag in freshly boiled water of desired temperature for 1-1.5 minutes. Enjoy!

Step 3


Pour the water in the teapot or kyusu and wait for 1-1.5 minutes for your tea to brew. For Fukamushi Sencha, brew for 45 seconds.

Recommended water temperature for Sencha is 176°F (80°C). If sencha is brewed for too long, it may become a little too bitter. The flavor will be mellow and less bitter when brewed at lower water temperatures such as 158°F (70°C). Try different brew times and temperatures to find your preference.

Step 4


Pour tea into each cup, alternating little by little until all cups are full with the same quantity and taste of the tea. Enjoy!

Remember to pour all the tea out of the teapot/kyusu to ensure optimal taste for the second brew. All of our teas can be steeped up to 3 times.
