HOW TO PREPARE USUCHA MATCHA

1 | Pour freshly boiled water into a cup to cool down the water. You can also use a yuzamashi water cooler.

2 | Add 1 teaspoon or 2 chashaku spoons of matcha (~2g) into the chawan matcha bowl. We recommend sifting matcha to remove any clumps.

3 | Pour 70ml (2.46fl oz) of hot water over the matcha. Recommended water temperature for Matcha is 176°F (80°C).

4 | Whisk the matcha with a Chasen bamboo whisk in a "W" motion until a rich foam covers the top.

HOW TO PREPARE KOICHA MATCHA

1 | Add 2 teaspoons or 4 chashaku spoons of matcha (~4g) into the chawan matcha bowl. We recommend sifting matcha to remove any clumps.

2 | Pour 50ml (1.76fl oz) of hot water over the matcha. Recommended water temperature for Matcha is 176°F (80°C).

3 | Whisk the matcha with gentle rotations with a Chasen bamboo whisk. Unlike Usucha, Koicha will not have rich foam on top.

My wife and I have tried multiple matcha powders in the past. Senbird is the one we keep using because of its quality, consistency and taste. Sure there are budget matcha powders you can buy, but none nearly as amazing as Senbird. We both use it as an early boost to our day since neither of us drink coffee as well as all of the health benefits that it promotes.

I have been buying another brand of organic Matcha powder for a couple of years now. It's a great product that comes in a foil lined bag. It has a pleasant aroma and sweet smell. I don't sweeten my matcha, so I got used to it. I tried this brand because it's packaged inside a tin, which is so convenient. I get to save one of my kitchen jars for other teas.

It's not something I'd buy for everyday use but it makes a great gift for a tea lover. Its pricy but presentation as well as tea quality is fantastic.
